Last weekend I had the pleasure of being invited to Edisto Island in South Carolina to take part cooking a whole Berkshire pig with Jim Hagood from Blackjack BBQ in Charleston. While the highlight of the weekend was definitely learning how to cook a whole pig, the dinner the evening before – which we hope inaugurated an annual tradition – was definitely something to write home about.

Bread Crumbs
1 lb. coarse ground bread
5 Tbs. olive oil
1/8 c. chopped parsley
2 Tbs. mayonnaise
4 cloves garlic
1/8 c. grated parmesan cheese
Mix ingredients well. Salt and pepper to taste.

1 box linguine
3 dozen Littleneck clams, rinsed well
1 c. white wine
2½ c. fresh clam juice
2 cloves garlic
8 Tbs. bread crumb
1 Tbs. olive oil

Dear Friends,
We’ve had another busy month here at the restaurant, and have finally unveiled our new wine list. We’ve also got some great new cocktails, including a blueberry margarita with 901 tequila. Also unveiled, after countless months, is the park across the street. It’s a bit late in the season for picnics, but we’re still glad to see less construction and more green space!
